Magic happens in a place like ensemble because teamwork holds us together. "We work together as a team, or nothing works as it should," says Executive Chef and Proprietor Dale MacKay.
"It's fun and inspiring to come to work everyday and to plan new menus, work with local suppliers, growers and vintners, but we work hard. Really, really hard."
The direct translation of ensemble - the name of my restaurant - is something like 'the sum representation of a group of parts that are in and of themselves excellent and equally important.'
"To me that means that we get to work with people we respect and admire. That we passionately love what we do, and that each and every one of us performs our job to the best of our ability all the time, each and every time we do it, and together that makes us great. If that's our number one priority here at ensemble, then it's natural that we do well, together, for ourselves, and for our customers. This was my dream from the first day that I thought seriously about being a world-class chef - about one day opening a restaurant of my own in a world-class city like Vancouver."
